Ingredients (serves 4):

  • 1/3 cup (80 ml) of Don Anecio Extra Virgin Olive Oil
  • 1/2 a whole chicken (around 2.6 lbs) chopped into 15 small bits 
  • 1 lb ribs chopped into small pieces (optional)
  • 4 cloves of minced garlic 
  • 2 medium grated tomatoes (approx. 80 ml or 1/3 cup). 
  • 10 ounces of string beans or flat green beans, cut into 2-inch pieces.
  • 1/3 lb of butter beans. 
  • 2 teaspoons of sweet Don Anecio Paprika.
  • 1 tbsp of Don Anecio Paella Seasoning 
  • 1 pinch of saffron (soak in a tablespoon of hot water until ready to use).
  • 14.1 oz of Don Anecio Paella Rice. 
  • 1.5 tbsp of Don Anecio Sea Salt salt.
  • 9 cups of water.
  • 4 cups for chicken or beef stock.

Preparation:

  1. Put your paella pan on medium-high heat and add Don Anecio Extra Virgin Olive Oil. 
  2. Sprinkle the pan with Don Anecio Sea Salt in a circle. 
  3. Add all of the chopped meat (chicken and pork ribs). 
  4. Brown and caramelize the meat on all sides approx. 20 minutes.
  5. Once the meat is well browned push it to the sides of the pan. 
  6. Add the green beans (cut into one inch pieces) and sauté for about 3 minutes.
  7. Now push the beans aside and add the garlic. Sauté for about 30 seconds and add the butter beans. 
  8. Add the Don Anecio Paprika and gently sauté for about one minute. 
  9. Add the crushed tomatoes and start to mix everything together. 
  10. While mixing in the tomato, add the Don Anecio Paella Seasoning and the saffron.
  11. Add the water. You need to add the water for the stock and the rice cooking all at once.
  12. Make sure you haven’t reduced the stock too much or too little, add the rice.
  13. Now add the rest of the water. Simmer on medium heat for about 10 minutes. 
  14. Lower the heat to a slow simmer for another 10 minutes. In these 20 minutes the liquid will reduce and you’ll be left with a flavorful meat stock. 
  15. Right after you add the rice you can stir just a bit to make sure the rice is all covered by broth and more or less evenly distributed. After this quick stir (only if needed) you will not stir again.
  16. Wait for the rice to cook on medium-high for the first 10 minutes. 
  17. Turn the heat down to medium-low, and cook for another 8-10 minutes.
